CU-8692wcmp7: update transformers to the latest version

Trainer installs and local installs fail with the latest version of the rust compiler that are used by default in various install guides.
Updating transformers here seems to do the trick

You removed tokenizers from the install requirements. Do we not still need that? I.e in medcat.preprocessing.tokenizers

transformers pulls in tokenizers and I think we can rely on that to have 'working' tokenizer versions. I only added the specific tokenizers dep yesterday thinking it would fix the issue
