Broaden terminology in docs This project supports more than Jetson now. Replace "Jetson" with the more generic "Platforms" where appropriate.

Updates for docker-based build We'll begin supporting a docker-based build as an option. The intent is to simplify the environment setup. Specifically, this removes the complicated mono install.
doc: Describe available edkrepo combinations Also, link the build docs to the combinations. In the build instructions, we'll use "main" as an example since it will always exist.
fix(build): Freshen up the build instructions Verified on Ubuntu 18, 20, and 22, but not publicizing Ubuntu 22 support (just working ahead). Clarified some pitfalls in the edkrepo install.
