Incompatibility between tvb-gdist and numpy>2.0 #126

Right now, it seems that tvb-gdist is not compatible with numpy>2, which is the one that is installed by the requirements.

gdist is used in the geodesics.py and surface_profiling.py

Related issue from the tvb-gdist repo:

the-virtual-brain/tvb-gdist#82

To solve, we should specify compatible versions of the dependencies in environment.yml, being careful that nothing else breaks.
