Describe the feature

As part of building out our data warehouse, I would like to be able to customize the documentation created with dbt docs generate. Minimally, I would like to provide a custom title, logo, and some styles.

Describe alternatives you've considered

I have tried customizing index.html after generating the docs but the changes do not always work after regenerating the manifest.json and catalog.json.

Who will this benefit?

dbt's documentation tools are a powerful way to share information about the data warehouse and promote its use. Being able to "brand" the documentation would enable it to fit more seamlessly into an organization's information systems.

Are you interested in contributing this feature?

I have plenty of python/jinja2 experience, and did go looking for the code that generates the docs, but I do not really write javascript and it seems that 99.5% of the UI is generated as javascript components.
