Refactor CSS variables validation and management #220

This pull request refactors the way in which the CSS variables are managed. As there are tons of variables at the moment, two enums have been created to hold separately custom-sidebar and Home Assistant CSS variables. Also, a common enum has been created to be used for the validations and the extending/overriding options functionality, to reduce the risk of committing a mistake and not including an option in some places when it is introduced.
