Only concern here is that the next hard fork won't be called postregolith and merging this in supporting it potentially creates backwards compatibility issues when we change it to the right name in the future.
I feel like we should pick a name and stick with it at this point rather than having to go back and effectively redo this with a new name.

This removes the overrides for Optimism, Bedrock, and Regolith. All of these forks have already been activated. This creates an override for the next network upgrade called Canyon.
