I am trying to build the source-engine on Intel MacBook but it is failing and I have no idea what can be wrong. Could you please advise?

I've been told that compiling on Intel is possible, but I don't know about Catalina specifically.
Edit: Actually that script is an older version that aborts on x64. Comment out that architecture check on lines 35 to 38and run again.
If it builds ok and fails to launch, also comment out line 384. (It was causing an issue for some people).
