What

Many themes in WordPress will allow users to select colors not only for the base font, headings, links and backgrounds (available today in the Site editor under Styles) but also things like:

Typically CSS can target these items to allow for a full customization of the site browsing experience, but FSE does not offer that ability just yet:

Why

This improves the editing experience in FSE and shortens the gap between the classic WordPress experience and it.

This would definitely be great - I see it is already in discussion in Gutenberg:
WordPress/gutenberg#27075
