Update the /.github/workflows/ files from nf-core/mpxvassembly to polkapox

Should github.repository key be 'polkapox' or 'CDCgov/polkapox' ? I've chosen the latter.

On second thought, do we need these at all? tostadas does not have them, but they could still be useful to constrain user behavior (e.g., branch.yml). Also, will awsfulltest.yml and awstest.yml even run?

Also, what about linting yamls?
