I think this problem is not from winutil but from winget / choco, winget or choco does not use an installer that has an automatic update configuration, if you want to use the auto update feature use the recommended installer on the support page or download it manually on the official brave website.
for now it doesn't seem to be possible, maybe it can be if the maintener changes the download link that leads to BraveBrowserSetup.exe, because that link is predefined.
