Currently the package is named 'collabora/online'.
The main purpose of a package name is to distinguish from other composer packages.
E.g. this is a Drupal module, but the package name could easily apply to something else.
If this is hosted on Drupal.org, the convention would be like "drupal/collabora_online", so it would match with the module name.
If we continue to host it on github and maybe publish in packagist, we could use an alternative name like "collabora/collabora-drupal", to distinguish from other packages you might want to publish e.g. for Wordpress etc. In this case we would not care about the Drupal convention.
Changing the package name is disruptive to users of the package, so let's not rush it.
