be able to show a sleek, sexy countdown so the user knows how many chars that's left.

Since 3.0 version you can put this in Description of block, for example
Countdown: 

The result will be this if you specify the maximum number of characters - 40:

Currently, 3.0 is only available in beta Crocoblock/suggestions#6408
