I've referenced this information here, a 3D printer forum in German Language.
I used so far only the released firmware Ender-3 S1_Pro_HWv24S1_301_SWV2.0.8.24F4-FDM_LASER from here. This version has still the wrong XY probe offsets. I do not (yet) have experiences of compiling the Ender 3 S1 Pro firmware from sources. Do you have such experiences?
I have read that the touchscreen of the S1 Pro is not open source. That's why they can't make a Marlin custom firmware for the S1 Pro. But if we replace the touchscreen for the V2 screen, (plug and play) we have an Ender 3 S1. Then it is possible to use, for example, mriscoc firmware.
I will read through that forum thread later. It is on my list :)
I missed the fact that you have the Pro printer. Then you are stuck with the Creality firmwsre for now unless you indeed grab the non-pro display. Or just go for Klipper :)
I have some experience with building Marlin yes. It is quite comfortable.

I have just added a link to your page. I found it super interesting that you found that the XY probe offsets are wrong.
Is it fixed in latest FW builds? Should be OK according to Creality's sources: https://github.com/CrealityOfficial/Ender-3S1/blob/7ea2f46033db0e9229cbb950e74ce569366dfbef/Marlin/Configuration.h#L1182
