[BACKLOG] SQF Demo Mode

To help users better understand the intricacies and cause/effect of SQF, add a demo mode to the animated Sankey diagram that enables user interaction and simulated streams.

Requirements

• Mock: https://www.figma.com/file/YxyWb2nbbgjKZP94Nrze8z/SQF-Miles's-Visuals?type=design&node-id=44-2&mode=design&t=Aq4yjlKLTaPmcdfq-0
• Add a "Live" v "Demo" toggle
• When toggled to "Demo" update the color/styling as mocked
• The demo will start with a clear Sankey diagram & stats
• The demo mode will utilize a modified "Open Stream" button:
  • Direct Funders - button should simulate another funder opening a stream of 1 per month to a random grantee
  • Quadratic Matching - button should simulate the matching funds being increased by 1 per month
  • Grantees - button should simulate "You" increasing the matching funds by 1 per month
• Calculate the stats and diagram animation as you would with real funds
