API spec needs to be updated #353

the API spec is not updated for at least one schema - organization. Overall, the spec needs a thorough review.

Hint:

The API spec can be found at https://github.com/Greenstand/treetracker-query-api/blob/main/docs/api/spec/query-api.yaml.
The API endpoint used is https://dev-k8s.treetracker.org/query/v2. For organizations, it is /organizations.
