I've been looking at the demo, but each time I open the datepicker, the displayed time goes back two hours. I'm in GMT +1.00, winter time.

Same. I end up using vue-masked-input + separate fields for date and time.

This still happens.
It would appear the form field itself does not account for the timezone.
