Add more example data

We currently only have a limited amount of EYA DEF example data in the repo. The example used in the tests is a minimal made up case. As the data models are now nearly complete and have gone through comprehensive review, it should be a good time to start building up a larger collection of examples. The example cases will be useful both to illustrate to users how to represent different types of data and to ensure that the data models are suitable for a wide range of cases.

Alina suggested we may be able to use the reports published by Netherlands Enterprise Agency: https://offshorewind.rvo.nl/. For example this one: https://offshorewind.rvo.nl/file/download/d61bb7ce-25eb-43dc-942f-60149f7d33b7/ijv_20231127_dhi_report-wind-resource-assessment-f.pdf. It would however be a significant effort to manually convert all the data in a PDF document to the EYA DEF format.
