PDF version not specified in metadata.
When multiple versions exist, it is hard to determinate the correct pdf.

Please excuse the late reply.

arXiv does not seem to specify in their description of bulk access options which version of LaTeX sources is provided. I would assume the most recent one at the time of access but can't say for sure.
The most recent version of unarXive was generated from an arXiv snapshot from Jan 1 2023. So to verify above assumption, you could check a few papers that got updated before and after that date and see which PDF version fits. In case the assumption holds, the PDF version would always be the one that was the most recent on arXiv on Jan 1 2023.
