Hello,

The rest_oai_pmh included is pinned to v1 (https://github.com/Islandora-Devops/islandora_install_profile_demo/blob/main/composer.json#L129), and is currently in a broken state. v2 of the extension/plugin fixes multiple issues

composer require 'drupal/rest_oai_pmh:^2.0@beta'
