If I encode an mkv with x265 enabling hme there are two additional connected parameters that are enabled: Level (hme-search) and merange (hme-range).
You can create a test file with a command like:
ffmpeg -t 1s -i somesource.mkv -map 0 -c:v libx265 -profile:v main10 -x265-params "hme=1" -an -sn -dn -y testfile.mkv
Then opening the mkv file with, for example notepad++, you can easily find the encoding settings:
