[Documentation] The parser combinator library

This discussion thread seeks to solicit and develop scope for documenting Aerie's homebrew library for combinator-style parsing, which exists in its own Gradle subproject under parsing-utilities/.

Root comments on this thread should raise some concern against this topic directly. Comments on roots can develop that concern in depth.

Key concerns (so far):

• Writing parsers without being deeply familiar with the library's implementation
• The case for a custom library vs. existing solutions (e.g. GSON, Jackson)
• Long-term maintainability and extensibility of the library
• How (and why) the library works the way it does
