We have docs on masking replay and network requests

https://posthog.com/docs/session-replay/network-recording
https://posthog.com/docs/session-replay/privacy

but don't have the same for events

that's tricky since you can capture events from so many different SDKs so we should either

have a tutorial for masking events on the web
have a similar privacy page for events that's split by platform
have a section in the docs for each SDK that covers this

will be affected by PostHog/posthog-js#1515 since that introduces a new mechanism for top level masking in the web SDK
