docs: Improve visuals of cookbook - add visual flair to dataset summaries

This is incredibly nit-picky, but the cookbook is long, and it is monotonous to look at a wall of text that is formatted identically.

One way to do this could be to include a bit of visual flair (colour, call-out boxes, etc.)

For example, after each dataset description, we have bullet points indicating some quick information about the dataset (is it a required dataset, etc.):

Adding some visual flair here (perhaps a colorful call-out box, a checkbox icon, something like that) might help break up the content, and also draw attention to the "key details" of the dataset.
