Document how to change a datastream's DSID #51

Since datastreams can't be renamed, the most obvious approach to doing this is:

download the datastreams with the old name (e.g., JPEG)
rename the datastream files to reflect the new DSID (e.g., JPG)
push up the newly named datastreams
