Consume did:jwk test vector

Test vectors for did:jwk are defined here:

Once PR #20 lands, we should be able to consume this vector and test that our implementation matches the vector's expected behavior. There may be changes needed to the resolution implementation specifically to ensure that all expected fields are present, following the defined nullability/empty object rules.
