That's a good question! The part before the parentheses is meant to be displayed to people who use your form. It's up to you what makes the most sense there for your context. The code in the parentheses is the only part that needs to be standard from the provided list.

in the doc https://xlsform.org/en/#multiple-language-support , it is recommended to use the language codebook from Internet Assigned Numbers Authority (IANA) -
