How can we reproduce this behavior?
Install Yoast SEO Premium, ACF Content Analysis for Yoast SEO on a WooCommerce site.
Add an ACF field to a product category page.
See that the content inside the ACF field is not recognized in the content analysis. Zero words are reported.

Aside from just product category pages, the content in ACF fields on WooCommerce products also aren't detected at all. This issue seems to describe it although slightly differently (it mentions about not having the 'add custom fields to page analysis') but the gist is the same as content isn't detected for WooCommerce products.
