connectors-ci: run nightly builds #24362

We want to be able to run nightly builds on the large-runner the infra team provisioned.
We should be able to call the CLI from a new GHA workflow:

connectors-ci test-connectors --release-stage=generally_available --release-stage=beta

We'd love the nightly builds to run in ~2hours, as this is what the existing nightly build usually achieve.
