Rationale for this change

The discussion on #4908 with @saikrishna1-bidgely made it clear to me that having more documentation about ListingTable and what it can do would help people;

What changes are included in this PR?

1. Add a doc example for creating ListingTables
2. Add some hints in the docs for SessionContext::read_parquet, etc pointing there

Are these changes tested?

Yes they are doc tests
