[Feature][Connector - V2] Support for AWS Glue Data Catalog in Apache Iceberg connector

Description

Currently the Apache Iceberg Connector only supports Hive and Hadoop as the catalog option. Want to get AWS glue Data Catalog as the additional option.

Usage Scenario

The current Apache Iceberg setup we have in production uses AWS Glue Data Catalog and we want to do a production setup for Apache Seatunnel, but we cannot do it currently because of the lack of AWS glue data catalog support for iceberg.

I think the glue catalog has already been supported, you just need to set the params in the iceberg.catalog.config, like iceberg.catalog.config

@litiliu , understood, thanks for clarifying, will try it out. It was a little unclear from the docs.
