[Gateway] - Use standardized token-lists

Current Behavior

We use a non-standardized version of tokenlists on the gateway

Expected Behavior

We could switch to use the tokenlist standard followed by tokenlists.org/Uniswap, which is already being maintained here: bobanetwork/token-list

For cases, where the gateway would need extra information on each tokens - the tokenlist can be extended with custom 'extensions'

Do we want to switch to bobanetwork/token-list?

As per latest discussion with @souradeep-das we should switch to the
https://github.com/bobanetwork/token-list to refer on gateway so it will be easier for us to update tokens and address if needed so we can avoid the release cycle.
