Everything is put in abysmall font size whenever I try to zoom.

Before trying to zoom

Shows up regardless of how I zoom.

Mmmm, I guess you are using GTK+ 3?
GTK+ 3 itself is buggy and often break things with its new release.

I'm actually not sure which one evilvte is using, how do I check ? I have both installed (and as an xfce user, I tend to lean on the gtk2 side).

Try this:
lsof | grep evilvte | grep gtk

Seems to be gtk3 indeed.

Latest libvte have bumped soname version to 2.91, which is not supported by evilvte yet.
I have no plan to support vte-2.91, nor various bugs introduced by GTK+ 3 itself.
I have stopped maintaining GTK+ 3.x based applications.

There are many libvte based terminal emulators.
I suggest you to rebuild evilvte againtst GTK+ 2, or use other terminal emulators. :-)
