Potentially via SeroTracker; engaging CITF could be helpful. Age, sex, and antibody target stratified seroprev estimates are available through the SeroTracker GitHub

This data is not exactly structured time series data - different studies with different sampling and antibody measurement techniques. Although, more unified in Canada than elsewhere
