vm-bhyve: v1.6-devel (rev. 106001)
FreeBSD: 12.3

When renaming a Debian12 UEFI VM it drops to a UEFI shell after start.

Error message:

BdsDxe: failed to load Boot0001 "UEFI bhyve-NVMe NVME-4-0" from PciRoot(0x0)/Pci(0x4,0x0)/NVMe(0x1,01- 00-BE-F1-20-FC-9C-59): Not Found

Selecting grub file from boot maintenance manager menu let's me start the VM but that seems impractical.

Did you try setting the uefi_vars to yes? It should allow you to save the settings you pick in the UEFI menu.

UPDATE:
Sorry just noticed you are on the FreeBSD v12.
uefi_vars isn't available in v12 :(
