Use Optional in configuration objects

Description

There is a known issue smallrye/smallrye-config#844 that prevents usage of Kotlin nullable types (e.g. Boolean?) in configuration objects.

Because we use nullable types in S3 configuration, we need to refactor this code to avoid application startup issues, due to undefined variables.
