Vignette - panel data demos

tidyverse does not generally provide methods for handling panel data, but this is something that epipredict can do. We should create a vignette that illustrates how the package works with panel data beyond the purely epidemiological context. A potential example is to use census data from StatCan & fit an AR model to predict employment or gdp.
