docs: Add section for starship interactions/stats

Overview

Have a way to demonstrate interactions happening with the starship repo and artifacts. Like:

• Docker image downloads
• Release pkgs downloads
• Helm chart downloads
• Npm package interactions

Implementation

• Create a code base to fetch this information, embed it into the starship repo (?)
  • Create a script/stats dir, which should just be a simple js, run as script, like here: https://github.com/electron/electron/blob/main/script/release/find-github-release.js
  • Make sure it runs in the CI as well
  • Output from it, should be read in the Readme.
