Use Lima's gRPC port forwarding

Use gRPC port forwarding instead of the default SSH.

In 1.0 Lima attempted to make gRPC the default, but there were issues and it was reverted. See whether those issues apply here or whether gRPC is any faster.

It turns out that gRPC vs SSH port forwarding is only used for additional portForwards, not the original SSH port itself. This setting wouldn't make a difference either way since nix-rosetta-builder only connects to the SSH port.
