Install Setup is Inconsistent --setup.html is different from setup on canonical website #117

The setup from the canonical workshop website is different from what is showing up in the setup.html.
We were wondering why we had to install plotnine when it wasn't even included in any lessons, but the setup.html instructs learners and instructors to install it https://datacarpentry.org/socialsci-workshop/setup-python-workshop.html

When we went to take a look at the canonical, there is no instruction to install plotnine (which makes sense since the package isn't used), the data for the workshop isn't even linked in, and the setup still includes python2 which was sunsetted at the end of 2019 https://datacarpentry.org/python-socialsci/setup.html Can we make things consistent between setup pages and remove the plotnine in the setup.html and update the alpha/canonical setup page?
