- Melt 1 tbsp butter in a large skillet over medium heat
- Add 1/2 c finely chopped onion; cook 3 minutes
- Add 1 c chicken broth and 1/4 tsp each salt and pepper; cook until reduced to 1/2 c.
- Add 1 c heavy cream and boil until thickened, 5 minutes
- Stir in 1 c frozen peas; heat through
- Toss with 4 oz julienned prosciutto ham, 1/2 c grated Parmesan cheese and 1/2 lb each cooked plain and spinach fettucine
