One thing I miss most in UWP and XF is the possibility to have data templates with their type as key. With this technology that WPF has, it is very easy to completely separate view and view model from each other. Which not only helps to fulfill several design principle but also makes it possible to write tests on UI level. I always admired the possibility to write integration tests, where you can depict whole user interaction scenarios.
