Update to new lemminx version

I'm currently a bit blocked by

• ICompletionParticipant#onXMLContent is not called for CDATA eclipse-lemminx/lemminx#1694

so I'd like to ask for the update here already even though there is sadly not yet a release schedule.

Although , we also release snapshot builds at https://download.eclipse.org/lemminx/snapshots/ .

if this assumption is correct, I think this can be closed now.
