Migrate from v7 to v8

Breaking changes when migrating from v7 to v8:

• Peer dependency requirements are updated:

• All deprecated exports and props are removed.
• @einride/ui-dates, @einride/ui-maps and @einride/ui-labs are deprecated and won't get any further updates.
• @mantine/core, @mantine/dates and dayjs are removed as direct dependencies. <MantineProvider> is no longer included in <EinrideProvider>.
