Description

While testing that that feature #121184 I found the following bug

We allow to set mappings at the index template level like here https://github.com/elastic/apm-server/blob/main/apmpackage/apm/data_stream/app_logs/manifest.yml but these fields are not in the final template (they where before 8.2)
Also looks like the default pipeline is not set

For the logs-apm.app template I got the following diff between 8.1 and 8.2

Actually I think this was due to a wrong version of the APM package installed, I tried to reproduce this in cloud and snapshot and did not get the error again.
