The beats columns need to have sortable: true, like other table's columns. Same for APM and Kibana.

It might be worth it to enable all fields as sortable by default in the base table layer to avoid this happening in the future.

I'll fix the issue at hand for now, but started the discussion of making this a default behavior: elastic/eui#1866
