  1. With fields API option enabled, go to Advanced Settings
  2. Change the default columns from _source to something else
  3. Go back to Discover
  4. Whatever you input in 2, won't be respected; we'll always show Document

This will be more confusing if you go to saving a saved search. After save, the default column entered in step 2 will be taken into account.
