docs: links to kurtosis and kurtosis description are outdated

Describe the bug

At the request of the ethereum foundation devops team, and others, we (Kurtosis) renamed the eth2-package to the ethereum-package: https://github.com/kurtosis-tech/ethereum-package

We've also made substantial changes to the ethereum-package and want to highlight those new changes in the description of kurtosis to reflect the real-world applications that this package is being used for.

This issue tracks the work to update links and description for the Kurtosis Ethereum package.

To reproduce

• https://ethereum.org/en/developers/local-environment/ --> points to the main Kurtosis repository instead of the ethereum-package
• https://ethereum.org/en/developers/docs/development-networks/#kurtosis --> has outdated description and outdated links

Expected behavior

Both of the below pages have the correct updated links and an updated description for Kurtosis' etheruem-package:
