FWIW,
I find 'Inter' (which is currently being used for body text on the pandocs and RGBDS pages) to be significantly more readable than most sans-serif fonts at typical desktop GUI/web sizes.
As for fixed width, 'JetBrains Mono' (which the RGBDS pages are using) is a pretty safe pick, being easy to read and popular. It tends to appear more sharp (survives AA/hinting better), at a wider range of sizes, than some of the other popular 'coding' fonts.
Maybe set custom sans serif and monospaced typeface?
