Clarify supported K8s versions

Documentation says the operator supports Kubernetes 1.21 and 1.27. If so, why only these specific versions? If not, I believe a review would be appropriate or even better a compatibility matrix, if need be.

The docs seems outdated, we guarantee compatibility based on versions used in e2e tests https://github.com/grafana/tempo-operator/blob/main/.github/workflows/e2e.yaml#L24
