Is your feature request related to a problem? Please describe.

while it's nice that the terraform has everything there to create an eks cluster from scratch, it's likely that a user would use an existing an VPC, so it would be nice to give an option to specify an existing VPC to deploy into.

create a optional variable that specifies an existing VPC and use that if specified
